Job Summary
This is administrative work overseeing all aspects of the daily lunch menu for satellite school. Responsibilities include producing a monthly menu; and acting as liaison between Food Services and vendors on all problems relating to the daily production of scheduled meals, including substitution of product when necessary.

Essential Functions

  • Develops daily lunch menu; publishes the menu on a monthly basis and distributes it to all concerned parties; determines the quantity and type of government commodity available, its quality, acceptance, cost, shelf life, and its best utilization in order to develop daily menus.
  • Authorizes necessary daily menu changes caused by lack of product or due to problems of acceptance or quality; arranges for substitution of menu or product; follows up on complaints regarding product acceptance by the students; resolves problems concerning product quality and delivery.
  • Monitors the acceptability of new test products; by inspection and other communication; ensure that venders’ products adhere to specifications and to the standards set by the U.S.D.A.
  • Performs feasibility studies concerning use of products in a given school with regard to equipment utilization and space availability.
  • Coordinates delivery of food products with their appropriate storage to ensure efficiency of sanitary conditions and to prevent spoilage.
  • Serves as a member of the Food Advisory Council; Accommodates request for information concerning nutrition and menu preparation.

Minimum Requirements

  • High school diploma or equivalent.
  • Four years of experience in food management, including two years in an administrative or supervisory capacity in conjunction with a large, diversified, and complex food service operation.
    OR
  • Any equivalent combination of training and experience determined to be acceptable by the Office of Talent.

Knowledge, Skills and Abilities

Demonstrated knowledge of:

  • current food costs.
  • the operation of satellite food preparation, production, and service in a large public school system with kitchens, at scattered sites.
  • the modern methods, materials, and equipment used in preparing and serving food on a large scale.
  • the safety and sanitation measures to be observed in a large scale cooking operation.
  • food values nutrition, and quantity preparation.
  • inventory control, transportation scheduling, production scheduling, and all other functions supportive of mass feeding programs.
  • U.S.D.A. and public health regulations governing the delivery of food services for public schools.

Demonstrated ability to:

  • plan and execute menus.
  • understand and interpret to others the guidelines and regulations pertaining to the administration of government funded food service programs.
  • exercise initiative and judgment in carrying out technical and clerical phases of the designated programs.
  • follow oral and written instructions.
  • establish and maintain effective working relationships with associates, program administrators and participants.
  • meet approved physical and medical standards.
